You create a new card - select the card type of Business/Partnership, then in the details section there is a dropdown menu for Type which has the option for Charity.
My drop-down does not have Charity as an option, did you customize it at the bottom with Customize List to include Charity as an option?
I didn't customize, those were the options under "Business/Partnership". I tried to attached a screenshot. Hopefully, this helps.
